Toasted Pan au Levain with Mushrooms
Serves 2
Ingredients:
Mushrooms
Butter
1 Shallot
1 clove of garlic
Chicken stock
Salt
Pepper
Olive Oil
Crusty bread
Pecarino cheese
Method:
Break mushrooms and chop them, not too small.
Add a couple of knobs of butter to a heated pan.
Chop a shallot and a clove of garlic, and add to the pan.
Add the chopped mushrooms.
Add a pinch of salt and pepper.
Add some chicken stock, approx 300 ml.
Add another knob of butter.
Leave to reduce.
In another heated pan, add some olive oil.
Slice some crusty bread.
Fry 1 side of the bread for about 15 seconds.
Put the reduced mushroom mix onto the bread.
Garnish with a few shavings from a pecarino cheese.
